Watermelon contains even more lycopene than tomatoes! Lycopene (a red pigment found in plants) acts as a powerful antioxidant and is associated with a reduced risk of prostate cancer & heart disease. The lycopene content in watermelon is very stable with virtually no deterioration over a 48 hour period once it has been processed. Watermelon also contains “curcurbitacin E” a unique phytonutrient which has antioxidant and anti-inflammatory properties. Preliminary studies also suggest curcurbitacin E may have anti-cancer benefits.
